Fat Crockpot Fennel and Barley Soup
2 medium
fennel bulbs, trimmed and chopped
2 medium zucchini, chopped
1 large onion, chopped
1/2 cup barley
2 cloves garlic, minced or pressed
1 Tbs fennel head, snipped
1/4 tsp black pepper
4 cups low-sodium V-8 juice
2 cups water
1 (14.5 ounces) can vegetable broth or chicken broth
Toss everything
in your crock pot. Cook on Low for 8- 10 hours or High for 4
to 5 hours.
